Wedding Breakfast

The wedding breakfast was originally thought to be named due to the breaking of the fast a couple undertook before marriage. More recently it is believed to have been named simply because it is the first meal taken as a married couple as breakfast is the first meal of the day.
This history and tradition has continued on but you can now make your Wedding Breakfast as formal or relaxed as you wish, we can help you find a balance giving you a day you will enjoy and treasure.

Talk to us about the table settings and your colour scheme, and we’ll be happy to offer you advice on who does the speeches and how to time it all to give you a relaxed and enjoyable day. We’ll arrange the table flowers for you; supplied from our local florist – Flowers by Morgan, and you can add any extras you wish, for example chair covers from one of our trusted contacts such as EventsbyDesign in Lancaster and Creative Cover Hire in Preston.

We will provide you with one of our experienced Toast Masters for the day so that you and your guests are expertly guided at the correct time to exactly where you need to be, and kept fully informed of what’s happening next.

Our Head Chef and his team will provide you with a menu to remember, perfectly cooked and presented to wow your guests and make it a meal they will talk about for a long time to come. We are proud to use locally sourced ingredients, just ask and we’ll tell you their origins of all our produce.

Starters

Duo of melon

Fanned melon served with fresh strawberries and fruit coulis

Atlantic prawns

 with crisp lettuce and topped with a Marie Rose sauce accompanied with brown bread and butter.

Smoked breast of chicken

Local smoked chicken breast on a bed of mixed leaves and Waldorf salad

Home made soup of your choice

Served with warm home baked rolls

Chicken and duck liver paté

Presented with a traditional red onion and orange marmalade and wholemeal toast

Mozzarella and sun blushed tomato salad

Dressed with a lime vinaigrette and knapped with a citrus and chilli guacamole

Smoked fillet of trout

Accompanied with a pink horseradish créme fraîche and brown bread and butter

 

Any of the above can be ordered with soup as a second option

 

Mains 

Fillet of Salmon

Lightly steamed and coated with a watercress & smoked salmon cream sauce and duchess potatoes
or
Plain grilled with a lime, coriander and crayfish butter with boiled new potatoes

Tender breast of chicken 

Thyme roasted with bacon roll, stuffing and roast potatoes
or
Poached in an asparagus and red pimento cream sauce with duchess potatoes

Roasted leg of lamb

With a rich port and minted lamb jus and roast potatoes
or
With a creamy white onion sauce scented with rosemary and boiled new potatoes

Herb roasted carved sirloin of Lancashire Beef

served with a Yorkshire pudding, roast potatoes and
pan roast gravy or a brandy and peppercorn cream sauce

Loin of Lancashire Pork 

Herb roasted and filled with an apricot and smoked bacon stuffing moistened with a rich pan gravy and roast potatoes
or
Pan-fried steak, presented on a creamy apple, cider and calvados sauce studded with plump sultanas and duchess potatoes

 

Deserts

Choux bun

Filled with chantilly cream and topped with a rich chocolate fondant 

Mint chocolate chip mousse

Rich dark chocolate mousse with peppermint pieces and crème de menthe. Topped with dairy cream

Sticky toffee pudding

with a butterscotch sauce and scoop of vailla icecream

Fresh fruit salad

a mix of chopped Market fresh fruits

Cheesecake of your choice

With an appropriate coulis

Strawberry shortcake

Layers of rich butter shortcake biscuit sandwiching fresh strawberries and vanilla cream

Traditional Apple Pie

served with sweet, thick vanilla cream

Warm orchard fruit crumble
